Good game that goes up to 8
Some titles for casual players is what I'm looking at here. Most of the night will be general talking and horsing around. I don't really want a cranium or that sort of thing, and not strictly looking for 'these games of ours' but about on the level of Citadels would be fine. Bohnanza doesn't go to 8 does it?

Spartacus
Zimby Mojo
Cosmic Encounter
Pete, how do you play poker with 8? Are you using extra suits like in the Badger Deck?

Codenames
Cosmic Encounter
Zimby Mojo (although I suspect 8 players makes this go until you quit)
A fully expanded Spartacus only goes to 7, not 8. But it scales great.

8 players is really hard without getting into "party game" territory. You're best bet might be the slew of "social deduction" style games that flooded the market a few years ago.
The Resistance
One Night Ultimate Werewolf/Vampire
Mascarade
Spyfall
Two Rooms and a Boom
Deception Murder in Hong Kong
Shadow Hunters
Of those I'm partial to Faidutti's Mascarade. It takes the roles of Citadels and brings in this whole bluffing thing where nobody knows has a specific role. Be prepared for a few games for it to gel and make sense of the flow, but it's pretty fun. It's probably lighter and faster than Citadels too.
I also really like Spyfall. It's very simple and fun. The way it works is that there are decks of cards that all have locations on them...say a nightclub. Then one of the cards in that mini deck is a spy. So in an 8 player game you deal out 8 cards. Seven of them will say "Nightclub" and one of them is a spy. On your turn you simply ask another player a question like "What's the tempature like in here?" Then they respond and get to ask someone else a question. The spy player has no idea what the location is and needs to deduce where they are simply from the answers players give. So players want to give vague answers that will prove they aren't the spy...but also won't give away the location. It takes a few rounds of playing it to get the hang of it...but man it's a blast. That moment when you're all at the beach and one person says they're wearing a winter jacket is pure gold. The rules for scoring are convoluted and dumb. Just play that either the spy wins or the agents win.
Shadow Hunters is also VERY good with 8 players. It's similar to Bang, but much more direct and confrontational. You have to get past the anime style artwork, but it's very much worth it. The game is short and you rapidly figure out which person is on which team...I really like it and probably need to buy a copy of this.
I've heard really good things about Deception: Murder in Hong Kong...but I haven't played it.
